Today we are going to tell you a special recipe, whose name is jackfruit biryani. This is such a special veg biryani that can also win the hearts of non -veg. This dish is liked all over India. The special thing is that raw jackfruit is used instead of meat, which absorbs the taste of spices very well.

Jackfruit preparation
First of all, let’s talk about cutting jackfruit. Apply mustard oil on hands, knife and cutting boards before cutting jackfruit so that its sticky juice does not stick. Cut jackfruit from the middle, then divide it into small pieces. It is important to remove the middle part, because it is the most viscous. If you want, you can also bring jackfruit and bring it in advance. Do not use ripe or sweet jackfruit in this recipe at all. This will spoil the taste of biryani and reduce spicy pungency.

Jackfruit biryani content
Raw jackfruit (chopped) – 300 grams
Basmati rice – 1.5 cups
Curd – 1/2 cup
Fried onion – 1 cup
Ginger-garlic paste-1 tbsp
Green chillies (cut in length) – 2 to 3
Turmeric Powder – 1/2 teaspoon
Red chili powder – 1 tsp
Garam Masala – 1 tsp
Coriander powder – 1 tsp
Whole spices (cloves, cardamom, cinnamon) – 1 teaspoon
Saffron milk – 1 tbsp
Mint leaves – 1/4 cup
Green Coriander – 1/4 cup
Ghee or oil – 3 tbsp
Salt – as per taste

The method is as follows
Cut jackfruit and boil it for 10 minutes in salt water. Then filter. Add curd, ginger-garlic paste, turmeric, red chili, coriander powder and salt to a bowl. Mernet jackfruit for 30 minutes.

Rice
Wash the rice and soak it for 30 minutes. Boil water in a large pot, add whole spices and salt to it. Now add rice and cook from 70 to 80%. Then filter the water and keep it aside.

Prepare jackfruit masala
Heat oil or ghee in a pan. Add the marinated jackfruit to it and fry till it becomes golden. Now add green chillies and garam masala to it and cook for 2-3 minutes.

Birian layer
First of all add a little jackfruit masala in a heavy bottom vessel. Then apply a layer of rice on it. Sprinkle onion, mint and green coriander on top of it. Add saffron milk on top. Repeat this process until all the material is over.

Give up
Seal the lid with a wet cloth so that the steam does not come out and cook on low flame for 20-25 minutes. After turning off the gas, leave it for 10 minutes.
