Whey (sour curd) – 1/2 kg

Boiled Potatoes – 6 to 7 (mash light in small pieces)

Cumin – 1/4 teaspoon

salt to taste

Ginger – a pinch (grated)

Green Chilli – 2 to 4 (finely chopped)

Green Coriander – 1 tsp (finely chopped)

Ghee/ mustard oil – 2 tablespoons

Asafoetida – a pinch

Red chili powder – 1/4 teaspoon

Turmeric Powder – 1/4 teaspoon

Coriander powder – 1/4 teaspoon

The method of making is as follows

Prepare potatoes first
Peel boiled potatoes and mash it lightly. Do not make a paste at all, keep a little coarse.

Fry spices
Heat mustard oil or ghee in a pan. Add cumin seeds and let it crackle. Now add asafetida, ginger, turmeric, red chili and green chili and fry for a few seconds.

Mix potatoes and whey
Now add mashed potatoes to it and mix well with spices. Now keep stirring slowly by adding whey, keep the flame very slow and keep stirring continuously so that buttermilk does not torn. Keep stirring it until it comes to a boil. As soon as it comes to a boil, add a cup of hot water and let it cook on medium flame for 10-12 minutes. During this time both its taste and thickness grow. Now add salt according to taste and let it boil lightly. Do not cook for a long time, otherwise the vegetable will become very thick.

Serve
Turn off the gas and add green coriander over it. Both its fragrance and taste are very special. Serve it with hot bread, paratha or rice.
