Essential material

  • Raw mango – 1 kg (chopped into small pieces)
  • Mustard oil
  • Salt – as per taste or about 100 grams
  • Turmeric – 2 tablespoons
  • Red chili powder – 3 tablespoons
  • Fennel – 3 tablespoons
  • Fenugreek seeds – 2 tablespoons
  • Calonji – 1 tbsp
  • Asafoetida – half a teaspoon
  • Mustard seed (slightly coarse) – 3 tablespoons
  • 2. Now prepare all the spices- coarse fennel, fenugreek, mustard seeds so that their taste juice dissolves well in the pickle.

    3. Take a clean and big pot. Add dried pieces of mango to it and add turmeric, salt, red chili, fennel, asafetida and the rest of the dry spices and mix well.

    4. Now add cold mustard oil in the sun already in the sun. Remember- Oil should be so much that it covers all mango pieces.

    5. Fill this mixture in a glass barni or ceramic vessel. Put some more oil and put the pickle from the air.

    6. Keep this pickle in the sun for 5-6 days and keep stirring with clean dried spoon every other day.
