- Ingredients for 10 people
- Milk – 2.5 liters
- Cauliflower – 2 large (or about 700 grams, grated)
- Ghee – 2.5 tablespoons
- Sugar – 1.5 cups (or as per taste)
- Cardamom Powder – 1 teaspoon
- Dry Fruits-Cashew, Almond, Pistachio (Chopped-5-6 Tsp)
- Saffron threads-10-12 (optional)
- Little milk (for soaking saffron-2-3 tablespoons)

Cabbage cleaning and preparation
Wash the cauliflower thoroughly and cut it into small pieces. Then grate it. Take hot water in a big pot, add a little salt to it and soak the grated cabbage for 5-6 minutes. This will remove the raw smell of cabbage. Then remove it from the water and squeeze it.
Keep milk boiling in a big heavy bottom pot. Boil the milk on low flame so that it becomes slightly thick and its taste increases.
Now heat ghee in a pan and add squeezed cabbage to it. Fry it on low flame for 10-12 minutes until light fragrance and golden color comes.
When the milk boils well and becomes light thick, then add roasted cabbage to it. Now let it cook on low flame for 15-20 minutes. Keep stirring in between so that it does not fall into the bottom.
5. Enhance the taste
Now add sugar to it and let it dissolve completely. After this, add cardamom powder and chopped dry fruits. Soak saffron in a little milk. This will bring both color and fragrance in Kheer.
Cook the kheer for 7-8 minutes so that all the tastes get well. Now turn off the gas. It can be served both in hot or cold.
