Essential things:
1. Half bowl fresh grated coconut (or powdered paste)
2. 2 bowl of rice flour
3. Taste salt
4. Hot water
5. A little oil
Take 2 bowl of rice flour in a parat and add half a bowl of coconut paste to it. Add salt as per taste and mix both well.
3. Dough kneading:
Now add hot water slowly knead the dough. Using cold water can completely burst or become hard. The dough becomes soft and smooth with hot water. The dough should be slightly softened.
Add a little oil and knead it again. This will not stick the dough in the hands and it will be easy to roll the puris.
5. Make dough:
Now make small lemon-shaped small doughs with flour and keep them covered with wet cloth so that they are not dry.
Place one dough between two plastic sheets, keep a plate or plate on top and press it with light hands. This makes complete round and uniform. There is no need to roll.
Complete frying process:
1. Heat oil in the pan. Keep the heat slightly faster than the medium.
2. Put one puri slowly in hot oil and keep putting oil with light hands.
3. The whole will swell in a few seconds. Fry till it becomes light golden from both sides.
4. Note not to brown it too much. Its color should remain light white.
Special Tips:
1. Use the plastic sheet only by applying light oil.
2. Keep the flame of gas faster than medium, the low flame will not be full.
3. Do not turn all over and over again, otherwise it will absorb more oil.
