Essential ingredients – Potato spicy vegetables
- Boiled Potatoes – 6 to 7 (medium size)
- Tomato – 2 (Finely chopped)
- Ginger – 1 inch (grated)
- Green Chilli – 2 to 3 (Finely chopped)
- Dry red chili – 2
- Asafoetida – 1/4 tsp
- Calonji – 1/2 tsp
- Fast leaves – 1
- Turmeric Powder – 1/2 tsp
- Red chili powder – 1 tsp
- Coriander powder – 1 tsp
- Cumin Powder – 1/2 tsp
- Garam Masala – 1/2 tsp
- Kasuri Methi – 1 Tsp
- Green Coriander – 2 tablespoons (chopped)
- Salt – as per taste
- Mustard oil – 2 tablespoons

Method of preparation potato vegetable step by step
- 1. First break the boiled potatoes lightly with your hand, so that the gravy is mixed well.
- 2. Heat mustard oil in a pan, when light smoke starts coming out of the oil, add bay leaves, dry red chili, fennel and asafetida and add it to it.
- 3. Now add grated ginger and chopped green chillies, fry for a minute.
- 4. Then add chopped tomatoes and cook until the tomatoes are soft.
- 5. After this, add turmeric, red chili powder, coriander powder and cumin powder and fry the spices for 2 minutes.
- 6. Now add potatoes to it and mix it well in the spices.
- 7. Add 1.5 to 2 cups of water, add salt and cook on low flame for 8-10 minutes, so that the taste of spices in potato gets out well.
- 8. Finally, add kasuri fenugreek, garam masala and green coriander and turn off the gas.


Serve hot kachori with potato spicy vegetables. If you want, you can also keep green chillies, pickles and jalebi, so that the plates will be more special.
