The cucumber used in this raita is slightly larger in size and looks light yellow in color. Local people call it ‘link’. Even if you do not have this, you can also make this raita with ordinary cucumbers.
To make this raita, first cucumber has to be peeled and grated. Pahari cucumber seeds are usually soft, so they do not need to be separated. If the seeds are strict, it would be better to remove them.
Now comes the time to add curd. You take the curd of the house or this raita becomes tasty with both packets. If the curd is thin, squeeze the cucumber water. Otherwise, you can also make both of them together. After mixing yogurt well, only turmeric and salt are added to it. This is its special thing, less spices, more taste.
