Easy method of making rabri malpua
1. Mawa or Khoya – 1 Cup
2. Milk – ½ cup (hot)
3. Flour – ½ cup
4. Sugar – 1 Cup
5. Water – 1 cup
6. Cardamom Powder – 1 teaspoon
7. Ghee or oil – to fry
8. Rabri – to serve
1. Prepare the solution:
First of all take mawa in a bowl and add warm milk to it. Mix it well so that there is no kernel. Now slowly add maida to it and mix. Your solution should not be too thin, nor too thick. If you want, you can also add a little wheat flour, but only maida will be right for traditional taste. Cover this solution for 5-10 minutes.
2. Create Sugar System:
Now take equal quantity of sugar and water in a pan. Cook it on medium heat until the sugar dissolves completely. Add cardamom powder to it. You need a light sticky texture in it. As soon as the syrup is ready, take it off the heat.

3. Fry Malpua:
Now heat ghee or oil in the pan. When the oil becomes medium, put the prepared solution in a round shape. Fry it till it becomes golden and slightly crispy from both sides. To prevent more oil from absorbing, take them out on tissue paper.
5. Serve with rabri:
Now the most fun part – serve hot Malpua with cold rabri. If you want, you can also add some pistachios or almonds from above.
